A Short History On Roman Spices

An elite, wealthy Roman family would have used a wide-variety of spices at the meal table, but the Roman spice of choice was pepper. It was found in many Roman households.

Rome and India were willing trade partners and Romans craved such Indian spices as cardamom, cassia, cinnamon, cloves, costum, folium, ginger, Indian nard, malabathrum, nutmeg, pepper, and sesame.

The Menu

Levisticum officinale: A spice made from the dried roots of a yellow-flowering plant. Also known as Liebstoeckl.

Poleiminze: A spice that was very close to mint. When cooking ancient Roman dishes in a modern setting, mint of today is used instead of Poleiminze.

Satureia hortensis: The bean herb, it is known as Saturei. The spice comes from a violet or white flowered type of plant that grows mainly in Southern Europe.

Silphium: Also known as Silphion, Laser, or ferula asa foetida. The spice comes from North Africa and the various cities [Carthage,etc.] that controlled the spice trade in the region grew wealthy off exporting silphium. It has a very strong taste and smell.
