In the autumn a variety of squash come
on the market as people use them for decorations. Many are quite good
to eat and make a beautiful presentation. These are a form of acorn
squash which are called, "Calico" besides being as delicious as acorn
squash, they are beautiful on the dinner plate.
These are simply prepared as you would
an acorn squash. Because it was so large, I cheated a little bit in the
preparation. After splitting and cleaning, I placed them cut side down
on a china plate and micro waved them for a few minutes until they were
softened. This steams the squash in its own liquids and speeds up the
oven time a lot. Sprinkle the insides with brown sugar and place some
pre cooked bacon in the cavity. About half an hour before serving, put
them in a 350º oven to finish them off. It made a good combination with
an autumn dinner of roast pork and mashed potatoes and gravy.
