    hi
    one of the things i tend to cook at camping events is fire roast turkey.

    cooking time is all day. figure on 4-6 hours depending on the heat the fire generates. i then to start the cooking around 10am which gives me plenty of time for dinner if it needs a few more minutes to finish up.

    get a nice fire going. you don't need to reduce it to coals, a knee
    high fire is good. if it gets too hot just move the spit up.

    i use an iron spit. the up rights a pointed iron 1/2 square stock that you just push into the dirt on either side of the fire.

    smash whole clove of garlic put this between the skin and breast meat.

    rub the turkey with a mix of olive oil, garlic and basil.

    every 10-15 minutes turn the bird 1/4 turn.

    around every half hour rub the bird down with the olive oil mix. this will make the skin nice and crisp wile keeping the meat juicy and tender.

    if your good you can do loaf of bread or maybe a pie in a dutch oven in the same fire wile the bird is cooking.

    i love traditional privative camping and cooking. although the smoke blows.
