Steaks
Turkey, it's not just for Thanksgiving anymore.
So many North Americans only cook turkey once or twice a year and then
only the same complicated difficult meal which leaves the cook too
exhausted to enjoy it and the diners too overstuffed to move. Turkey
is cheap and plentiful. There are many easy ways to enjoy it and it
is a great low fat way of getting protein. Here is one of the easiest.
Turkey steaks are no more than thin slices from the breast of a turkey
which are cooked in any way that you would cook a chicken breast or a
medallion of veal or pork. In this recipe the slices are merely dredged
with flour and sauteed quickly in a little butter. That's it. That's
the whole recipe. I like to add a bit of sauce to make it more
interesting and here they are served with a warmed mango chutney and
accompanied by caramelized acorn squash rings. The hors d'oeuvre was
stuffed deviled crabs with chipotle sauce. It makes a good and interesting
dinner and is the no hassle, done in a flash, kind that even the cook
loves.
