An old family recipe
1 egg, separated
milk
2 1/2 cups flour
1 tsp salt
1 Tablespoon sugar
1 cup shortening
3 cups peeled and sliced apples
1 cup sugar
1 teaspoon cinnamon
Dash of nutmeg to taste
In a small bowl, beat egg yolk till light and foamy. Add enough milk to make 2/3 cup liquid. In larger bowl, sift flour, salt and sugar. Cut in shortening until coarse mix forms. Add milk-egg yolk mixture and mix lightly. Divide dough in half. Roll half to fit 15x10x1/2 inch flat pan. (cookie sheet) Spread apple slices on top. Mix 1 cup sugar and spices to sprinkle on top. Roll remaining dough to same size. Put on top of apples and pinch edges to seal. Beat egg white till peaks form. Brush over top of dough. Bake at 400 for 30 minutes.
Drizzle this icing over top as soon as the squares are out of oven.
1 cup powdered sugar and 2 or 3 tablespoons milk mixed well.
Cut into squares and serve warm or cooled.
