    BEAN FLOUR

    It's very much overlooked today, but bean flour is a wonderful help in the kitchen. It can be made from any kind of dried bean and you don't have to drive to the health food store to buy it. It is available on line (This is from Berry Farm in Ohio) or it is really easy to make at home if you only need a little bit.The electric coffee mill works just fine for me.

    It's a sure thing that the Native Americans ground dried beans and used them for making flat breads and stews. I make an American version of falafel with them and it makes a quick and easy thickner for anything. Click on the image of the bag for more information and recipes.
