BAKED
APPLES
An old favorite, simple to prepare and simply delicious.
A baked apple is easier than pie and so fast you'll never
know you're making it. All you need do is hollow out an apple with a
paring knife making certain you get all the seeds and core out, and squeeze
a little lemon juice over the exposed apple flesh. Then stir together
a filling of dry bread crumbs, sugar, and cinnamon. I've added raisins
soaked in sweet sherry overnight with some of the liquid and some chopped
English walnuts. Pack this filling into the apples and put a pat of butter
on top. sprinkle with brown sugar just to color the top and bake at 350º
for about 45 minutes until the apple is soft when pierced with a fork.
Let them cool while dinner is being served and top with a little whipped
cream or vanilla ice cream. They're simple, old fashioned, and a nice
ending to dinner.
