    OLD FASHIONED FRIED ZUCCHINI

    Sometimes the old simple way is the best. This is my favorite way of eating zucchini. I must know dozens of ways to cook this squash which has provided a surplus in my garden for years; this in the end, is always my favorite.

    For this method of cooking zucchini use medium sized fruits big enough to make a good sized round and not so big that the skins are tough as they are peeled in stripes. It makes the dish prettier. mix equal amounts of flour and grated parmesan cheese and put the mixture in a bag. Slice the zucchini which has been peeled so that thin stripes of skin remain, into half inch rounds. Put the rounds a few at a time into the flour cheese mixture and shake. Shake off the excess coating and fry immediately in olive oil. Fry gently until golden brown, but still firm. Drain on a rack and serve hot as a vegetable side dish.You can add some minced basil on the top if you wish. There is never any left in my house.
