This recipe came from an elderly neighbor in the small town where I grew up. She gave it to my mother, who may have done the editing on it. It tastes great but I've always had trouble with it being a bit watery. Still, it's a great way to use the summer's bounty!
Virginia Smith's Zucchini Pie
(all these cups are supposed to be heaping cups)
2 cups zucchini, chopped fine
1 cup peeled, diced tomatoes
3/4 cup onion, chopped fine
3/4 cup sharp cheddar, grated
1 teaspoon sugar
oregano, salt, pepper to taste
3/4 cup milk (this was crossed out and replaced with 1/2 in another color ink, and while I've tried it both ways, it's still watery, who knows?)
1 cup bisquick
Mix all together. Grease baking dish and put in mixture. Mix the bisquik and milk until lumps are gone. Spread on top of casserole.
Bake at 400 for 30 minutes. Butter top before serving.
