Both my grandmothers made corn puddings but I never had their recipes, since I was too young when they died to consider that I would ever actually have to cook in order to eat. This recipe came out of my local newspaper some years ago. It works for me.
2 eggs, well beaten
1 cup milk or half and half
3 tbs. sugar
1 1/2 tbs. cornstarch
salt and pepper to taste
1 cup corn, fresh or frozen
2 tbs. butter, melted
Preheat oven to 375. Add milk to beaten eggs. Mix sugar, cornstarch and salt and pepper, add to liquid. Stir in corn and butter. Pour into a buttered 1 1/2 qt. casserole and bake for 45 minutes.
A bit of dried basil is good in this too. About a half teaspoon or so.
