Summer Hamburger Helper
This is one of those recipes that has no exact measurements. It depends on how much food you want to make. So I'll list the ingredients and let you decide how much of each you want to use. The important thing is that all the veggies must be fresh. I've tried to recreate this in the winter, and it's not nearly as good. Times are approximate too.
lean hamburger
olive oil
chopped onions
chopped zucchini
corn, cut fresh of the cob
green beans, cooked
tomatoes, peeled, seeded and chopped
Seasonings: salt, pepper, parsley, italian seasoning, all to taste.
So what you do is prepare the green beans and cook them til they're tender. Drain and set aside. Cook the hamburger, drain that and set aside.
In a large skillet, heat the olive oil and add the onions, zucchini and corn. Toss and cook for ten minutes or so. Then add the hamburger and seasonings and cover. Cook over medium low heat, stirring occasionally, for 10-15 minutes, or until it looks like the veggies are getting tender. Then add the green beans. Cook another 5-10 minutes, taste and adjust seasonings, then add the tomatoes. Stir and turn off heat.
While our Tsalagi would not have had olive oil or Italian seasoning, they would have had the rest of the ingredients, though the hamburger likely would have been ground venison, and they would have seasoned this dish with whatever seemed tasty to them, as can you. I just happen to like it with the Italian herb blend.
