When I was younger I rented a little house beside a lake. My landlord was a great cook and often brought me samples of his efforts, and would share his recipes when I particularly liked something. I rather think he liked compliments. *G*
This dessert is easy and cheap, and very delicious!
Dickie's Apple Bread Pudding
5 tablespoons butter or margarine
2 large apples, peeled, cored, diced
10 slices firm textured white bread
1/2 cup raisins
4 cups milk
4 large eggs
1/2 cup sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup walnut pieces - optional
Melt 2 tablespoons of the butter in a skillet. Add apples and saute until tender-crisp. Remove from heat, set aside.
Spread bread slices with rest of butter on one side. Cut off and dice crusts.
Line bottom of greased 12x8x2 (2qt) baking dish with slices, butter sides down. Sprinkle with apples, raisins, bread crusts (and nuts).
Beat milk, eggs, sugar, and spices together and pour over bread and apples. Let stand 20 minutes. Cover with foil and bake 30 minutes at 325. Uncover, bake 30 minutes more until knife inserted comes out clean.
