    Sift and measure 3 cups flour, then sift together with 1 tsp. baking soda, 3 tsp. cinnamon, 1 tsp salt and 1/4 tsp baking powder. Set aside.

    In large bowl, beat 3 eggs until foamy. Add 3/4 cup sugar and 1 cup cooking oil. Beat 2 or more minutes.

    Add in dry ingredients alternately with 2 cups grated zucchini (with skin left on). Stir in 3 tsp vanilla and 1/2 cup chopped walnuts.

    Grease and flour 2 loaf pans. Bake loaves at 350 for 45 - 50 mins on lowest rack in oven. Test by using toothpick.
