    APPLE CREPES

    The quickest and easiest of desserts

    I tried this out last night and we very much enjoyed them. With products now available, you can make this elegant little dessert in no time at all. I make very small portions of dessert as we eat few sweet things, but you can serve as many of these per guest as you like. The secret to this and other crepe recipes is Melissa's prepared crepes in a package. Melissa is the daughter of Freida, the woman who introduced the kiwi to the US. The pre packaged crepes are the sweet dessert ones and you cannot use them for a savory dish, but they are really handy for quick crepe dessert.

     

    In the afternoon , I sliced one Fuji apple and cooked it in a small frying pan with some butter and brown sugar until tender, but not mushy. I added a little dark rum and some very good cinnamon and turned off the fire, covered the pan and just let it sit. Later when I had some time, I divided the mixture into two portions and put it on prepared crepes, rolled them, buttered them and put them in a shallow boiler pan.

    While clearing the table of the entree dishes, I slipped the crepes in a 350º oven until they were nice and brown around the edges. Plate them, add a bit of whipped cream, and serve them and that's that. No fuss no muss no bother. I served them with some peach brandy and it made a very good ending to a very good dinner.
