    1 baked single pie crust
    1 pint fresh strawberries
    1-1/2 cup water
    1-1/2 cup sugar (granulated cane sugar works best)
    1/4 cup cornstarch
    1 small box of strawberry gelatin dessert*

    Mix and boil the water, sugar and corn starch until clear. Add the gelatin dessert. Stir well and cool to room temperature.

    Prepare the strawberries for eating. (Wash, trim, slice if you wish.)

    Put the berries in a baked pie shell and add the syrup. Top with whipped cream. (Use the real stuff. Plastic topping is dreadful.)

    *This recipe is from my mother's collection. She got it from an elderly neighbor. The original recipe from about 1910 calls for unflavored gelatin and food coloring, but it was updated in the 1950s to use strawberry gelatin. I suspect you could use any "red" gelatin. The updated version of the recipe (from the 1950's) calls for "a dime box of Jello" which translates nowadays to a 2.75 (77 g) box.
