Well, actually Wuffing is not a mythological name, but was the surname of the royal house of East Anglia. Some of the other surnames are tribal names however, while others such as Scylding are drawn from myth. We do need more surnames, and the Norse ones would be an excellant addition. Part of the problem is though that surnames were a late development in Northern Europe. Patronymics were used, and sometimes these would trace back to a distant ancestor such as the case with the Anglo-Saxon Wuffing or Iceling (the royal house of Mercia), but surnames such as the Romans had, or we have now did not exist.
