    Delicious and varied combinations were prepared with this grain.

    Tortillas - they would lightly boil the corn with water and a little bit of mineral lime so as to remove the skin from the kernel. The mixture was removed and carefully washed, then finely ground and mixed with water - during grinding so that it will have a certain concsistency with this dough, very thin tortillas (flat cakes) were made and laid on banana leaves. There are cooked in a flat clay dish called a comal, and eaten with food instead of bread. It took a certain amount of skill and practice to make a tortilla well.
