I found this recipe in a book I picked up not too long ago that gave a brief overview of the Aztecs and thought I'd share it. It sounds absolutely divine, but I haven't tried it yet so if someone does, please let me know how it turned out! *g*
Ingredients
225g (8oz) dark cooking chocolate
1 litre (2 pints) milk
1/4 tsp ground cinnamon
2 drops vanilla essence
Equipment
Scales
Double boiler or large heatproof bowl and saucepan
Wooden spoon
Measuring jug
Saucepan
Large and small whisks
4 mugs or cups
Directions:
1. Weigh the chocolate and then break it into small pieces. Put the pieces in the top of the double boiler, or into the heatproof bowl.
2. Fill the bottom of the double boiler or a large saucepan with cold water. Then bring the water to boil. Turn the heat down so that the water continues to boil gently.
3. Put the container with the chocolate over the one with the boiling water. Stir the chocolate with a wooden spoon until it has melted.
4. Measure out the milk and pour it into another saucepan. Heat the milk gently but do not let it boil. Pour the melted chocolate into the hot milk.
5. Add the cinnamon and the vanilla essence to the mixture and bring it to a boil.
6. Turn the heat down and whisk the mixture for 2 minutes until it is foaming.
7. Pour the chocolate into mugs and use the small whisk to whisk the chocolate again, so that there is foam on the top of each mug.
