Spelt is an ancient grain, one of the oldest cultivated in the world. It is a precursor to modern wheat. It was rationed daily to Roman soldiers, used in the making of cakes and breads of various kinds, and also offered ritually. Spelt flour was often mixed with other flours in baking.
Organic farmers and health food enthusiasts are beginning to grow spelt again. With the advent of pesticides, cultivation dropped off. Aparently the grain doesn't do so well when pesticides are applied. It is said to have a pleasant, nutty flavor.
