    I have a couple of scrummy mousetrap, cheesy melt recipe variations for you to try out.

    * Use Turkish, pita, rye or mixed grain/wholegrain breads. white bread is not as delicious nor is it healthy so avoid it.

    * Slap on sliced tomato, sliced onion, freshly chopped parsley or corriander, some finely chopped garlic and tasty cheese on top. Sprinkle with paprika or cayenne (for those who like it hot) and black ground pepper. Place in the grill and melt. A blob of sweet chilli sauce is always yummy on top.

    Anything goes to the limit of your imagination but the following ingredients are also nice in various combinations with things.

    fresh chilli peppers
    chives
    eggplant or aubergine
    artichokes
    olives
    herrings
    salmon or tuna
    sliced capscium
    capers (caperberries)
    fennel

    And for the Aussie's out there, try Vegemite or Promite with melted cheese on top. Its good tucker, full of vit B's! and great for post hangover munchies...
