I used to sprout alfalfa seeds every summer. All I did was rinse them so they were moist, spread them out on a dinner plate, cover them with another dinner plate and store them in a dark, moist place...usually under the sink.
Just be sure to peek in on them once a day to be sure they're still moist (but not drowning in water); and don't let them dry out. Once they get going, these little guys sprout like crazy.
