Minced Dried Oyster with Diced Vegetables

Hao Shi Ji Lai is a must at any Chinese New Year banquet because the word for dried oysters (hao shi; ho xi; ho see) sounds like "wealth," "good business" and all good things to come in the new year. Eat and grow rich!

Ingredients:
125 g Dried Oyster
90 g Carrot
90 g Bamboo Shoot
6 pieces Dried Chinese Black Mushrooms
90 g Lean Pork
2 stalks Spring Onion
1 stalk Chinese Parsley
1 head of Lettuce
1 Tbsp Seafood Paste (Hoisin Sauce)

Seasoning:
1 1/2 Tbsp Light Soya Sauce
1/2 tsp Sugar
1/3 tsp Salt 1 tsp Sesame Oil
1/2 tsp White Pepper
1/8 cup water

Thickening Sauce:
1 tsp Cornflour
1 Tbsp Water

Wash and soak the oyster and mushrooms. Trim off the mushroom stems. Steam for about 15 mins and chop finely.

Mince meat and marinate with 1 tsp. light soya sauce and 1/2 tsp. dark soya sauce and 1/2 tsp. of cornflour.

Parboil carrot and bamboo shoots. Dice. Coarsely chop parsley and spring onion.

Stir fry minced pork with 3 Tbsp of corn oil or peanut oil. Add diced oyster and mushrooms and 1 tbsp. Chinese wine. Add all other ingredients and seasoning. Stir fry forabout 10 minutes before stirring in thickening sauce.

Sprinkle spring onion and parsley on dish before serving. Wash and clean lettuce and cut into round pieces. Spread a little seafood paste (hoisin sauce) on each piece and wrap ingredients in lettuce pieces. Roll them up and enjoy!
