Burst Deep Fried Balls
Since "kai kou means to open your mouth (kai - open the door) and xiao implies making a joke, Kai Kou Xiao can be translated as "Be Merry!" or "Have a good laugh!" - which is good for digestion and brings good luck to the table and in the year ahead. So eat, drink and be merry!
Ingredients:
230 g Whole Wheat Flour
2 tsp Melted Lard (or Peanut oil / Corn Oil)
110 g Sugar
2 tsp Baking Powder
85 g Water
6 Tbsp White Sesame Seeds
Sift the wheat flour and baking powder into a mixing bowl. Add in sugar and lard or the corn oil / peanut oil.
Gradually pour in water and knead mixture into a dough. Letrise for about 1/2 hour.
Roll dough to about 4 cm diameter and cut into small pieces.
Knead each piece into round balls and coat with white sesame seeds.
Deep fry balls in hot corn or peanut oil over medium heat until upper parts split. Turn split parts down with a pair of chopsticks and deep fry until golden in colour.
Serve hot!
